I can only assume without doing the Food Timeline, but Root teas date back to the earliest culinary records.  They varied from place to place.  They are inferred in South Carolina's Low Country as "putting the root" on someone, but I'm sure that Root Tea, although possessing mystical qualities, doesn't "put a root" on anyone. I think they are artisan spirits made with passion and love.  They taste of botanicals and dreams.  They mix beautifully and bake up in brownies and dense chocolate flourless cakes like a champion.  Root is old and new again.
